The cuisine of Rajasthan is a blend of the rich foodstuff of the royalty, war lifestyle of its inhabitants and cooking with minimum use of water in the desert belt.Cuisine in RajasthanCuisine of Rajasthan varies from regions to regions and even at a range of every few kilometres. Rajasthani cuisine is an electric blend of various influences. Different types of kinds of cuisine in Rajasthan are enough yummy to increase you appetite.
Generally food is prepared in such way that they can be eaten for a number of days. Also foods are prepared with minimum use of water due to scarcity of water. In spite of water, milk and curd were used to prepare foods. The cookery delights of the various royal families of Rajasthan (the land of kings) have raised food to an art form. It is interesting fact that the recipes are a secret with Royal cooks and are handed down from generation to generation. Jaisalmer, Bikaner and Barmer are desert belt of Rajasthan. These reasons suffer with scarcity of water. So in these reasons cooking involved the minimal use of water. Milk, buttermilk, curds and clarified butter are used in cooking as the substitute of water. In some reasons of Rajasthan, mango powder is used as a substitute of mangoes and asafetida is used to substitute of garlic and onions. Rajasthan food is enough yummy to enhance your hunger and key ingredients used to prepare food are dried lentils, sangria, ker, and gram flour. Gatte-ki-Sabzi (Besan-ki-Sabzi), Khata, and Pakodi are mouthwatering foodstuff of Rajasthan. The daily food in Rajasthan generally includes roti (bread) made of wheat, millet, barley or maize with gatte-ki-sabzi, pickles, and curries. Curries generally are made from Besan and curds.




They are brilliant red in color nut not too spicy. Pure ghee is used in enough quantity to prepare foods. Lapsi is a sweet dish, prepared with Dalia (broken wheat), pure ghee and sugar. Some Rajasthani communities are vegetarians and some are not. Combination of Dal, Bati and Churma is a favorite dish of vegetarians in Rajasthan. Lal Maans (Red Meat) of lamb, goat, hen, etc is favorite dish of non-vegetarians. Red chilies are used in enough quantity to cook meat and gives prepare red color.Safed Maans or White Meat is also favorite kind of non-vegetarian dish. This dish is prepared with white mutton. Its white curry is made from the use of fresh coconut kernel paste, white pepper, cashew nuts, poppy seeds, almond, etc. Safed Maans is favorite dish of the Kachchwaha family of Jaipur. Sweet dishes like Mishri Mawa, Ghevar, and Kalakand of Jaipur are also famous among people. Bikaneri spicy Bhujiya, mixture, sweets, papads, Rasgulla, etc must try to taste. They are very delicious. Bikaneri food stuffs are sold in all over India. Jodhpur is famous for Laddoos, Makhaniya Lassi and Kachoris. Bharatpur is famous for sweets made from pure milk. Jaisalmer is famous for tasty Laddoos. Pushkar is famous fro Malpuas. Ajmer is famous fro Sohan Halwa. Alwar is famous for Mawa.
